I did, but I didn't complete all the side quests because they were too tedious. I don't even have the option to go back because my brother exchanged his ps3 |:
I like the second one. It's more interesting, but I want a third character that isn't a monster. When I saw Hope, I kept raging at the TV to make Hope my heal *****. |:
I guess I just need to find a better monster that heals... still using Caith or whatever.

Use Serah or Noel as your primary medic. Monsters are better for practically every other class like COM, SEN, SAB, etc.
Though I primarily only used Twilight Odin for my COM and Silver Chocobo as my SEN as my monsters, Serah and Noel filled up every other role.

With coming DLC you can get people as monsters, like now you can get Lightning as a "monster"

Do you have all your roles maxed at 99? Also, a lot of my levels are around ~50, do I get to learn more skills in a certain role or it's just attack, magic and hp?

I have maxed roles and 159/160 fragments.
iirc noel is the better SYN over serah and serah is the better SAB over noel.
there's a final level you learn skills for each class, you should be able to see the list of skills to learn as you're leveling up, if the list is empty then all skills are learned already for that class for that character.
You'll reach a point when you have all skills and it's just about leveling for more stats.
