It's like, an educated person isn't just someone who is able to absorb all the knowledge but rather someone who can use what they've learned to make wise choices in life. Having wisdom is like having the ability to think and realize that whether one is informed enough to make a decision.

That's how I understood it anyway.

My interpretations:

It's not about what you know now. It's about what about what there is left to know. In the sense of education, there are still a lot of things we don't know. Even if you're an A+ student, everyone needs to realize that A+ doesn't mean anything because there are still lots of things left to know. That A+ will only show you the boundaries of what we really know right now which isn't a lot. There are still questions unanswered and even questions not asked before.

I think of that quote the same way I think of this one:

Better to remain silent and be thought a fool, than to open your mouth and remove all doubt.

An educated person is one who should be smart enough to not speak on subjects that they have no knowledge of.
