A table grid listing advantageous and disadvantageous matchups would be the most organized, but you won't be able to put reasons why.
The other way is to do a giant text wall of spoilers for each class. To make it neater, bullet point the pros and cons of each matchup under the matchup. You could also list the matchups in terms of a win:loss ratio for each class, out of a total of an even 6 or 10 matches. That way, you can show how slight or severe the advantage is for each matchup.
Also, I wouldn't exactly call this a small project, because a large amount of experience and research (and probably debate) would need to go into this to be as fair and accurate as possible. This is essentially doing all the work of making a tier list, since a tier list considers all individual matchups to evaluate a class/character's overall performance, but omitting the final step of looking at a class's overall performance.
Also, to omit any player influence, some assumptions should be set, like everyone would have access to all their skills, be at the same level (50), and have a standard weapon that's not heavily reinforced
