I never actually did this stage before, just watched a few videos on it. On Wiki it says that you get attack counters for how many times you attack the Flaming Gerald. So what exactly happens if you reach 5, do you invincible frame the explosion (suplex, bbq, etc), or does it go down when you stop attacking the knight

It goes down while you not attacking the mini boss. If there's 5 marks on you then you explode dealing huge amounts AoE damage around you. Even if you invinceframe it, you can put your teammates at risk.
