Freyalise's X of the Day, Starring Freyalise

So. Uh. I get a blog now? That's pretty awesome. I guess I'll use it to teach you all a little each day (or each day I remember).

Freyalise's 'I AM SO LAZY' Recipe Corner:

Today's recipe: Microwave-fried chicken!

I love this recipe because it's incredibly simple and very easy to customize. Feel free to experiment with whatever spices you want - I have a white pepper mixture I'm very fond of.

1 1/2 c baking mix (Bisquick or the like, if you live in the states)
Seasoning to taste, generally ~3 Tbsp (the original recipe used paprika, I use white pepper or Italian seasoning, use whatever you want.)
Salt to taste
Pepper to taste

8 chicken breast or thigh fillets, thawed

Combine everything but the chicken in a large ziplock or other sturdy bag until well-mixed. Feel free to taste-test, there's nothing in there that will kill you.
Rinse the chicken, and pat dry, making sure it's as dry as possible.
Drop the chicken fillets into the bag one at a time, shaking to coat thoroughly and evenly.
Arrange the fillets on a microwave-safe plate or dish with the thickest parts facing the outside.
Microwave for 13-15 minutes on high, flipping over the chicken halfway through, until the thickest parts are cooked through (no pink anywhere, and yes you do have to slice it open and check).
OM NOM NOM NOM. Serves four.

    Nice recipe. Unfortunately I can't find a local equivalent of the baking mix.

    BTW, do you formally study Latin? o_o

    I studied Latin for four years in high school. Unfortunately, my college doesn't offer it. D:

    EDIT: According to wikipedia, an acceptable substitue would be 1 cup mix = 1 c flour, 1 1/2 tsp baking powder, 1/2 tsp salt, 1 tbsp oil or melted butter, but that's more for things like pancakes and such.

    Butter goes extremely well with chicken actually. Also, if you add some chopped herbs (rosemary/thyme/salantro/etc) the chicken will be really fragrant. \o/

    The problem is that this is supposed to be more of a breading than a batter.

    Hmm, I'll have to try mixing up the substitute next time I make this.
