Hunters are notorious for being the "faceroll" class. It's really easy. Every single spec. The only difficult thing it remembering to turn off taunt when you enter dungeons.

Arcane Mages are also pretty easy to get the hang of. Especially with the changes to how Arcane stacks cycle around patch 5.2.

In addition, I'd say Elemental Shamans are pretty forgiving in what you need to do. Especially since 5.0 dropped removing the need to check your totem sets before dropping all 4. Your DPS rotation, simplified, is just Flame Shock -> Lightning Bolt -> 7-8 stacks of Lightning Orbs Fulmination and hitting Lava Burst when it's off cooldown or you get a free instacast proc. You're AoE is literally hitting Chain Lightning over and over again. It's great.

Shadow Priests are pretty easy, too. There isn't too much to their DPS rotation other than to make sure your DoTs are up and then just fill with Mind Flay. There are tons of addons out there to help make missing a spell or two in your rotation easy to fix. You're also able to have a healer off-spec if you wanna try that out for something different (and faster dungeon queues, aha).

Druids are a pretty good class in that you can get a taste of just about any role -- kitty form for a Rogue-y melee DPS, bear form for your tank, Boomkin for a (rather clunky) mage DPS, and resto for healer.
